Ingredients
- 8 oz Spicy sausage (chorizo or similar), casings removed
- 12 oz Potatoes, diced (about 1/2-inch)
- 1/2 cup Onion, diced(optional)
- 1 tbsp Chili powder
- 1/2 tsp Ground cumin
- 1/4 tsp Salt
- 1/4 tsp Black pepper
- 1 tbsp Olive oil(optional)
- 4 large Eggs
- 1 tbsp Milk (or water)(optional)
- 4 pieces Flour tortillas (8-inch)
- 1/4 cup Salsa(optional)
Instructions
- 1
Prep (10 minutes): Dice the potatoes and onion. Crack eggs into a bowl and whisk with milk (if using).
- 2
Cook (25 minutes): Heat a large skillet over medium-high heat. Add olive oil (if using), then cook the sausage until browned, breaking it up as it cooks (about 8 minutes).
- 3
Add potatoes (and onion if using) to the skillet. Sprinkle with chili powder, cumin, salt, and black pepper. Cook, stirring occasionally, until potatoes are tender and browned in spots (about 15 minutes).
- 4
Push the sausage-potato mixture to one side of the pan. Pour in the eggs and scramble gently until just set (about 2 minutes).
- 5
Warm tortillas briefly in the same pan or microwave. Assemble tacos with the sausage-potato-egg mixture and top with salsa if desired.
