Street Style Corn Tacos

Ingredients

  • 3 cups Corn kernels
  • 8 small Corn tortillas
  • 0.25 cup Mayonnaise
  • 2 tablespoons Sour cream
  • 0.5 cup Cotija cheese
  • 1 teaspoon Chili powder
  • 1 tablespoon Lime juice
  • 0.25 cup Cilantro
  • 1 tablespoon Vegetable oil

Instructions

    Heat vegetable oil in a large skillet over high heat.

    Add the corn kernels and cook without stirring for 2-3 minutes until charred on one side.

    Stir the corn and continue cooking for another 3 minutes until evenly toasted and smoky.

    In a small bowl, whisk together the mayonnaise, sour cream, lime juice, and chili powder.

    Remove corn from heat and toss with the creamy lime mixture and half of the Cotija cheese.

    Warm the corn tortillas in a dry pan or over an open flame until soft and slightly charred.

    Fill each tortilla with the corn mixture, then top with remaining Cotija cheese and fresh cilantro.

    Serve immediately with extra lime wedges.
