Ingredients

  • 6 eggs
  • 1 can (14 oz) crushed tomatoes (canned)
  • 2 bell peppers, sliced
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 chipotle in adobo, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 1 avocado, sliced
  • 0.25 cup fresh cilantro(optional)
  • 2 lime wedges(optional)

Instructions

  1. 1

Heat olive oil in a large skillet over medium heat. Sauté onion and bell peppers until softened and lightly charred at the edges, 8-10 minutes.

  2. 2

Add garlic, cumin, smoked paprika, and chipotle; cook 1 minute until fragrant.

  3. 3

Pour in crushed tomatoes, season with salt, and simmer until thickened, 12-15 minutes.

  4. 4

Make six wells in the sauce and crack an egg into each. Cover and cook until whites are set but yolks remain runny, 6-8 minutes.

  5. 5

Top with sliced avocado and cilantro, squeeze lime over, and serve straight from the skillet.
