Ingredients

  • 1 cup Cooked white beans (cannellini), drained and rinsed
  • 3/4 cup Long-grain white rice (uncooked)
  • 3 cloves Garlic
  • 1 tbsp Olive oil
  • 1 tsp Smoked or sweet paprika
  • 1/2 tsp Ground cumin(optional)
  • 1 1/2 cups Vegetable broth or water
  • 1/4 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)
  • 1 tbsp Lemon juice(optional)

Instructions

  1. 1

Prep (10 minutes): Mince the garlic. Rinse and drain the beans if using canned. Measure the rice and broth.

  2. 2

Cook the rice (about 20 minutes): In a small pot, heat olive oil over medium heat. Add the rice and stir for 1 minute. Add broth, bring to a simmer, cover, and cook until the rice is tender and liquid is absorbed, about 18–20 minutes.

  3. 3

Cook the garlicky beans (about 15 minutes): While the rice cooks, warm a splash of olive oil in a skillet over medium heat. Add garlic and cook 30–45 seconds. Stir in paprika (and cumin if using) for 10 seconds, then add beans and season with salt and pepper. Cook, stirring, until hot and slightly thickened, about 12–14 minutes.

  4. 4

Combine (about 5 minutes): Fold the garlicky beans into the cooked rice. Stir to combine and warm through. Turn off heat, stir in lemon juice if using, and rest 2–3 minutes before serving.
