Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion
  • 3 cloves garlic
  • 10 oz fresh spinach
  • 3/4 cup long-grain white rice
  • 1.5 cups vegetable broth
  • 2 tbsp fresh dill
  • 2 tbsp lemon juice
  • 1/2 cup feta cheese
  • 2 scallions(optional)
  • to taste salt and black pepper

Instructions

  1. 1

Heat olive oil in a large skillet or pot over medium heat. Dice the onion and cook for 4-5 minutes until softened, then add minced garlic and cook for 1 minute more.

  2. 2

Stir in the rice and toast for 1-2 minutes, then add the broth. Bring to a simmer, cover, and cook for 12-15 minutes until the rice is nearly tender.

  3. 3

Add the spinach in handfuls, stirring until wilted, then mix in the dill, lemon juice, salt, and pepper. Cover and cook 3-5 more minutes until the rice is done and most liquid is absorbed.

  4. 4

Remove from heat, fluff the rice, and top with crumbled feta and sliced scallions if using. Serve with extra lemon wedges.
