Ingredients

  • 4 pieces bone-in chicken thighs
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 3 cloves garlic
  • 3/4 cup polenta (cornmeal)
  • 3 cups chicken broth
  • 2 tbsp butter
  • 1/4 cup parmesan cheese(optional)
  • 1 tsp fresh rosemary(optional)
  • 1/2 tsp black pepper

Instructions

  1. 1

Season chicken thighs with black pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken skin-side down for 5-6 minutes until golden, then flip and cook 4 more minutes. Remove and set aside.

  2. 2

Meanwhile, bring chicken broth to a boil in a saucepan. Slowly whisk in polenta, reduce heat to low, and simmer for 20 minutes, stirring occasionally, until creamy. Stir in butter and parmesan; season to taste.

  3. 3

Mince garlic and add to the skillet with the chicken drippings; cook 30 seconds. Add soy sauce, honey, and rosemary, and simmer 2-3 minutes until the glaze thickens and becomes glossy.

  4. 4

Return chicken to the skillet and toss to coat in the glaze for 1-2 minutes until heated through and fully cooked (internal temperature 165°F).

  5. 5

Spoon creamy polenta onto plates, top with glazed chicken, and drizzle remaining pan sauce over everything. Serve immediately.
