Ingredients

  • 2 cups green papaya (shredded)
  • 2 tbsp lime juice
  • 1.5 tbsp fish sauce
  • 1 to 2 Thai chili (chopped)(optional)
  • 1.5 tbsp roasted peanuts (chopped)
  • 1 tsp palm sugar (or brown sugar)(optional)
  • 1 clove garlic (minced)(optional)

Instructions

  1. 1

Shred the green papaya into thin matchsticks (or use pre-shredded green papaya). Place in a bowl.

  2. 2

In a small bowl, mix lime juice, fish sauce, palm sugar (if using), and minced garlic (if using).

  3. 3

Add the chili to the papaya, then pour the dressing over. Toss and massage gently for 1–2 minutes until the papaya is coated and slightly softened.

  4. 4

Top with chopped roasted peanuts and toss again. Taste and adjust with more lime (for tang), fish sauce (for salt/umami), or chili (for heat). Serve immediately.
