Skillet Caprese Chicken with Cherry Tomatoes

Ingredients

  • 2 pieces boneless, skinless chicken breast
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 250 g cherry tomatoes
  • 2 cloves garlic
  • 1 tbsp balsamic vinegar(optional)
  • 120 g mozzarella
  • 6 leaves fresh basil(optional)

Instructions

    Prep (10 minutes): Pat the chicken dry and season both sides with salt and black pepper. Halve the cherry tomatoes. Mince the garlic.

    Cook (18 minutes): Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 6–8 minutes per side until browned and cooked through (internal temperature 165°F/74°C). Transfer chicken to a plate.

    In the same skillet, add cherry tomatoes and cook 4–5 minutes, stirring occasionally, until blistered and starting to burst. Add garlic and cook 30 seconds, then stir in balsamic vinegar (if using).

    Reduce heat to low. Return chicken to the skillet. Top with mozzarella and cover for 2–3 minutes until melted. Finish with basil (if using) and serve immediately.
