Ingredients

  • 14 oz extra-firm tofu
  • 2 medium zucchini
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 2 cloves garlic
  • 1 tsp fresh ginger
  • 1 tbsp sesame seeds(optional)
  • 1 tbsp citrus (lemon or lime) juice
  • 1 tbsp neutral oil (for crisping)

Instructions

  1. 1

Prep (15 minutes): Pat tofu dry and cut into 1/2-inch cubes. Slice zucchini into thin half-moons. Mince garlic and grate ginger.

  2. 2

  4. 4

Stir together soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger. Pour into the skillet and toss 1–2 minutes until glossy and evenly coated.

  5. 5

Finish: Turn off heat, squeeze in citrus juice, sprinkle with sesame seeds if using, and toss once more. Serve immediately.
