Ingredients

  • 2 pieces chicken cutlets
  • 3/4 cup panko breadcrumbs
  • 2 tbsp sesame seeds
  • 1/4 cup all-purpose flour
  • 1 large eggs
  • 4 tbsp olive oil
  • 3 cups arugula
  • 1/2 cup cherry tomatoes
  • 1 whole lemon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp parmesan cheese(optional)

Instructions

  1. 1

Pound chicken cutlets to 1/4-inch thickness and season both sides with salt and pepper (5 minutes).

  2. 2

Set up a breading station: flour in one shallow dish, beaten egg in another, and panko mixed with sesame seeds in a third. Dredge each cutlet in flour, dip in egg, then press into the panko-sesame mixture to coat (5 minutes).

  3. 3

Heat olive oil in a large skillet over medium-high heat. Fry cutlets 3-4 minutes per side until golden brown and cooked through to 165°F (8 minutes).

  4. 4

Toss arugula and halved cherry tomatoes with lemon juice, a drizzle of olive oil, salt, and pepper.

  5. 5

Top each cutlet with the arugula salad, shave or grate parmesan over top if using, and serve with lemon wedges (2 minutes).
