Ingredients

  • 10 large Eggs
  • 12 oz Italian sausage
  • 1 medium Zucchini
  • 1 medium Red bell pepper
  • 1/2 medium Yellow onion
  • 1 tbsp Olive oil
  • 2 cloves Garlic
  • 1/4 tsp Black pepper
  • 2 tbsp Fresh basil(optional)
  • 1 tsp Salt-free Italian seasoning(optional)

Instructions

  1. 1

Preheat the oven to 375°F (190°C). Dice the zucchini, bell pepper, and onion, and mince the garlic.

  2. 2

Heat olive oil in a 10-inch oven-safe skillet over medium heat. Remove sausage from casings and cook, breaking it up, until browned, about 6-7 minutes. Drain excess fat.

  3. 3

Add the onion, bell pepper, zucchini, and garlic to the skillet. Cook until vegetables are softened, about 5-6 minutes.

  4. 4

Whisk the eggs with black pepper and Italian seasoning in a large bowl. Pour the eggs evenly over the sausage and vegetable mixture in the skillet.

  5. 5

Cook on the stovetop for 2-3 minutes until the edges begin to set, then transfer the skillet to the oven and bake until the center is fully set, about 12-15 minutes.

  6. 6

Let rest 5 minutes, slice into 5 wedges, garnish with fresh basil, and serve.
