Ingredients

  • 1 lb chicken thighs, boneless and skinless, cut into strips
  • 1/2 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp curry powder
  • 1 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp lime juice
  • 8 wooden skewers, soaked in water 20 minutes
  • 1/3 cup peanut butter
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sriracha(optional)
  • 2 tbsp fresh cilantro, chopped(optional)

Instructions

  1. 1

Soak wooden skewers in water for 20 minutes while you prep the other ingredients.

  2. 2

In a bowl, whisk together coconut milk, soy sauce, curry powder, brown sugar, garlic, and lime juice. Add chicken strips, toss to coat, and marinate 15 minutes.

  3. 3

Meanwhile, make the peanut sauce: whisk peanut butter, rice vinegar, honey, sriracha, and 2-3 tbsp warm water until smooth and dippable.

  4. 4

Thread marinated chicken strips onto skewers, discarding excess marinade.

  5. 5

Grill or pan-sear skewers over medium-high heat 4-5 minutes per side until cooked through and lightly charred, about 10 minutes total.

  6. 6

Serve skewers hot with peanut sauce for dipping and a sprinkle of cilantro.
