Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1/2 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp curry powder
  • 1 tbsp brown sugar
  • 2 cloves garlic
  • 1 tbsp lime juice
  • 1/3 cup creamy peanut butter
  • 1 tbsp rice vinegar
  • 1 tsp sriracha(optional)
  • 8 wooden skewers
  • 2 tbsp fresh cilantro(optional)

Instructions

  1. 1

Soak wooden skewers in water for 10 minutes while prepping. Cut chicken thighs into long strips about 1 inch wide.

  2. 2

In a bowl, whisk together coconut milk, soy sauce, curry powder, brown sugar, minced garlic, and lime juice. Add chicken strips, toss to coat, and marinate 10 minutes.

  3. 3

Meanwhile, make the peanut sauce: whisk peanut butter, 3 tbsp warm water, rice vinegar, remaining soy sauce, and sriracha until smooth. Set aside.

  4. 4

Thread chicken strips onto soaked skewers, weaving so each strip folds over itself 2-3 times.

  5. 5

Grill or pan-sear skewers over medium-high heat 4-5 minutes per side until charred and cooked through (internal temp 165°F), about 10 minutes total.

  6. 6

Serve skewers with peanut sauce for dipping and sprinkle with chopped cilantro.
