Ingredients

  • 1 cup Red bell peppers (roasted, jarred or homemade)
  • 2 cloves Garlic
  • 3 tbsp Olive oil
  • 180 g Pasta (penne or spaghetti)
  • 80 g Feta cheese (crumbled)
  • 2 tbsp Fresh basil or parsley (chopped)(optional)
  • 1/4 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil and cook the pasta until al dente (about 10–12 minutes). Reserve 1/2 cup pasta water, then drain.

  2. 2

While the pasta cooks, blend or finely chop the roasted red peppers with the garlic and 1 tbsp olive oil until mostly smooth.

  3. 3

In a large pan over medium heat, warm the remaining 2 tbsp olive oil and cook the red pepper-garlic mixture for 2–3 minutes, adding a splash of reserved pasta water to loosen if needed.

  4. 4

Add the drained pasta to the pan and toss to coat, adding more reserved pasta water as needed to make a light sauce (about 1–2 minutes).

  5. 5

Turn off the heat and fold in the feta. Season with black pepper and salt to taste, then top with chopped herbs.
