Ingredients

  • 2 cups Cooked day-old rice
  • 1 cup Mixed vegetables (peas, carrots, corn)
  • 1 large Egg
  • 3 tbsp Soy sauce
  • 1 tsp Sesame oil(optional)
  • 1 tbsp Neutral oil (canola or vegetable)
  • 1 clove Garlic, minced(optional)
  • 2 tbsp Green onions, sliced(optional)

Instructions

  1. 1

Prep (10 minutes): If the rice is clumpy, break it up with your hands. Mince the garlic and slice the green onions.

  2. 2

Cook (15 minutes): Heat a large skillet or wok over medium-high heat and add the neutral oil. Scramble the egg in the pan, then transfer to a plate.

  3. 3

Stir-fry the mixed vegetables in the same pan for 3–5 minutes until hot and lightly tender. Add garlic (if using) and cook 30–60 seconds.

  4. 4

Add the rice and stir-fry 6–8 minutes, breaking up any remaining clumps. Drizzle in soy sauce and toss until evenly coated.

  5. 5

Return the scrambled egg to the pan, add sesame oil (if using), and stir 1 minute. Top with green onions (if using) and serve immediately.
