Ingredients

  • 350 g Pork shoulder, diced
  • 1 medium Onion, diced
  • 1 medium Apple, peeled and diced
  • 1 tbsp Sage leaves, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil
  • 500 ml Chicken stock
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Plain flour(optional)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

    Prep (15 minutes): Dice the pork, onion, and apple; chop the sage; mince the garlic.

    Heat the olive oil in a pot over medium-high heat. Brown the pork in batches (about 6–8 minutes total), then remove to a plate.

    Reduce heat to medium. Add onion and cook until softened (about 4 minutes). Stir in garlic and sage for 30 seconds.

    Sprinkle in flour (if using) and stir for 1 minute. Return pork to the pot, then add stock, Dijon mustard, and Worcestershire sauce. Season with salt and pepper.

    Simmer gently, uncovered, until the pork is tender and the stew thickens (about 45 minutes). Stir occasionally. Add a splash of water or stock if it gets too thick, then serve hot.
