Classic deep-fried potato strips seasoned with salt and served as a side.

Ingredients
- 4 large Russet potatoes
- 1 liter Vegetable oil
- 1 teaspoon Fine sea salt
- 2 liters Cold water
Instructions

Peel the potatoes and cut them into even sticks, approximately 1/4 inch thick.

Soak the potato sticks in cold water for at least 30 minutes to remove excess starch. Drain and pat completely dry with paper towels.

Heat the oil in a deep pot or fryer to 300°F (150°C).

Fry the potatoes in batches for about 5 minutes until they are soft but not yet browned. Remove and drain on a wire rack.

Increase the oil temperature to 375°F (190°C).

Fry the potatoes a second time for 2-3 minutes until they are golden brown and crispy.

Drain immediately on paper towels and toss with salt while still hot.
