Ingredients

  • 200 g Rice noodles (quick-cook)
  • 3 tbsp Peanut butter
  • 2 tbsp Lime juice
  • 1.5 tbsp Soy sauce
  • 1 tbsp Brown sugar
  • 1 tbsp Tamarind paste
  • 3 tbsp Water
  • 1 tbsp Neutral oil
  • 2 large Egg
  • 1/4 cup Roasted peanuts, chopped
  • 2 cloves Garlic, minced(optional)
  • 1/4 tsp Red pepper flakes(optional)

Instructions

  1. 1

Soak or cook the quick-cook rice noodles according to package directions until just tender, then drain and set aside (about 10 minutes total prep/cook time includes this step).

  2. 2

In a bowl, whisk peanut butter, lime juice, soy sauce, brown sugar, tamarind paste, and water until smooth; set the sauce aside.

  3. 3

Heat oil in a large skillet over medium-high heat. Scramble the eggs until just set, then push to one side.

  4. 4

Add garlic (if using) and red pepper flakes (if using) to the empty side for 15–30 seconds, then toss in the drained noodles.

  5. 5

Pour in the peanut-lime tamarind sauce and toss quickly until the noodles are evenly coated and glossy, about 2–3 minutes. Fold in chopped peanuts and serve immediately.
