Ingredients

  • 10 oz ground beef
  • 2 tbsp taco seasoning
  • 6 oz dry pasta (penne or rotini)
  • 2 cups water
  • 1 cup salsa
  • 1 cup cheddar cheese (shredded)
  • 1 tsp olive oil(optional)
  • to taste salt(optional)

Instructions

  1. 1

Prep (10 minutes total): Shred the cheddar if needed and measure out pasta, salsa, water, and taco seasoning.

  2. 2

Cook (25 minutes total): In a large pot or deep skillet over medium-high heat, add olive oil (if using) and cook the ground beef until browned, 5–7 minutes. Stir in taco seasoning and cook 30 seconds.

  3. 3

Add pasta and water to the pot. Bring to a boil, then reduce to a simmer and cook, stirring occasionally, until pasta is tender and most liquid is absorbed, 15–18 minutes.

  4. 4

Stir in salsa and cheddar cheese. Cook 2–3 minutes until the cheese melts and the sauce is creamy. Taste and add salt if needed, then serve.
