Ingredients

  • 180 g elbow macaroni (or penne)
  • 2.5 cups broccoli florets
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 3 cups low-sodium chicken broth
  • 0.5 tsp salt(optional)
  • 0.25 tsp black pepper(optional)
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese
  • 0.25 cup grated Parmesan(optional)

Instructions

  1. 1

Prep (10 minutes): Cut broccoli into bite-size florets. Mince the garlic.

  2. 2

In a large pot, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant.

  3. 3

Add broth, then bring to a gentle boil. Stir in pasta and broccoli, reduce to a simmer, and cook, stirring occasionally, until pasta is tender and broccoli is bright green, about 20–22 minutes.

  4. 4

Lower heat to low. Stir in milk, then add cheddar (and Parmesan if using). Cook 1–2 minutes, stirring, until the cheese is fully melted and the sauce is creamy and thick. Season with salt and pepper to taste, then serve.
