Ingredients

  • 1.5 cups rolled oats
  • 0.75 cup sunflower seed butter
  • 0.33 cup honey
  • 2 tbsp maple syrup
  • 0.25 cup cocoa powder
  • 2 tbsp ground flaxseed
  • 1 tsp vanilla extract
  • 0.25 tsp fine sea salt
  • 0.5 cup, toasted shredded unsweetened coconut
  • 3 tbsp cacao nibs
  • 0.33 cup, chopped dried cherries

Instructions

  1. 1

Toast the shredded coconut in a dry skillet over medium heat, stirring constantly, until golden, 3-4 minutes. Cool completely.

  2. 2

Pulse 1 cup of the rolled oats in a food processor until coarsely ground.

  3. 3

Combine the ground oats, remaining whole oats, sunflower seed butter, honey, maple syrup, cocoa powder, ground flaxseed, vanilla extract, and sea salt in a bowl and mix until a thick, uniform dough forms.

  4. 4

Fold in the cacao nibs, dried cherries, and half the toasted coconut.

  5. 5

Chill the dough 15 minutes so it firms up and is easy to roll.

  6. 6

Roll into 16 even balls, about 1.5 tbsp each.

  7. 7

Roll each ball in the remaining toasted coconut to coat, then chill 30 minutes before serving. Store refrigerated up to 1 week.
