Ingredients

  • 2 fillets salmon fillets
  • 1.5 tbsp white miso paste
  • 2 tbsp unsalted butter
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 cup long-grain rice (or jasmine)
  • 2 cups water
  • 0.5 tsp kosher salt
  • 2 tbsp fresh parsley
  • 2 tbsp fresh chives (or green onion)(optional)
  • 0.25 tsp black pepper

Instructions

  1. 1

Preheat oven to 425°F (220°C). Pat salmon dry and place on a parchment-lined baking sheet. Season with salt and black pepper.

  2. 2

In a small bowl, stir together miso paste, softened butter, minced garlic, and lemon juice until smooth. Brush generously over the salmon.

  3. 3

Bake salmon for 12–14 minutes, until just cooked through and flaky.

  4. 4

While salmon bakes, rinse rice, then simmer with water and salt over medium-low heat for 12–14 minutes, until tender and the water is absorbed. Remove from heat and fluff with a fork.

  5. 5

Stir parsley (and chives if using) into the warm rice. Serve salmon with herbed rice and any pan juices.
