Ingredients

  • 450 g ground pork
  • 900 g cauliflower
  • 1 large bell pepper
  • 1 medium yellow onion
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp dried oregano
  • 1 tsp chili powder
  • 2 tbsp lime juice
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup fresh cilantro(optional)

Instructions

  1. 1

Grate cauliflower into rice-size pieces (or use pre-riced). Pat dry with a towel to improve browning.

  2. 2

Dice onion and bell pepper; mince garlic.

  3. 3

Heat 1 tbsp olive oil in a heavy skillet over medium-high. Add pork and break up; cook until browned, 8–10 minutes.

  4. 4

Add onion and bell pepper; cook 6–8 minutes until softened and lightly charred.

  5. 5

Stir in garlic, smoked paprika, cumin, oregano, chili powder, salt, and pepper; cook 1 minute.

  6. 6

Add cauliflower rice; spread into an even layer and cook 8–10 minutes without stirring much to crisp edges, then stir and cook 2 more minutes.

  7. 7

Finish with lime juice and cilantro (optional). Serve hot.
