Ingredients

  • 4 large eggs
  • 1/4 cup (about 1 oz / 28 g) feta cheese
  • 1/2 cup, diced bell pepper
  • 1/2 cup, diced zucchini
  • 1/4 cup, diced red onion
  • 1 tbsp olive oil
  • 1 clove, minced garlic(optional)
  • 1/2 tsp dried oregano
  • 1/8 tsp salt(optional)
  • 1/8 tsp black pepper(optional)

Instructions

  1. 1

Preheat oven to 375°F (190°C). Lightly grease a muffin tin (makes about 6 cups).

  2. 2

Sauté veggies: Heat olive oil in a skillet over medium heat. Add onion and cook 2 minutes, then add bell pepper and zucchini; cook 5 minutes until slightly tender. Stir in garlic (if using) and oregano; cook 1 minute. Remove from heat and cool 2 minutes.

  3. 3

Whisk eggs in a bowl with feta, black pepper, and salt (if using).

  4. 4

Divide sautéed veggies among muffin cups. Pour egg mixture over veggies, filling each cup about 3/4 full.

  5. 5

Bake 12–15 minutes until set in the center and lightly golden. Let cool 2 minutes, then remove and serve.
