Ingredients

  • 1.5 cups cooked long-grain rice
  • 0.1 gram saffron threads
  • 1 medium bell pepper, diced
  • ½ cup canned chickpeas, drained and rinsed
  • ¼ cup feta cheese, crumbled
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. 1

In a small bowl, steep the saffron threads in 2 tablespoons of warm water for 2 minutes.

  2. 2

Heat the olive oil in a large skillet over medium-high heat; add the minced garlic and sauté for 30 seconds until fragrant.

  3. 3

Add the diced bell pepper and chickpeas, stir‑fry for 2–3 minutes until the pepper softens.

  4. 4

Stir in the cooked rice, then pour the saffron infusion over it; toss everything together and cook for another 3 minutes, allowing the rice to absorb the color and flavor.

  5. 5

Season with salt, black pepper, and lemon juice; remove from heat and sprinkle the crumbled feta on top before serving.
