Ingredients

  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 can (15 oz / 425 g) canned white beans (drained and rinsed)
  • 1/2 tsp ground cumin(optional)
  • 1/2 tsp dried oregano(optional)
  • 1/4 tsp salt(optional)
  • 1/4 tsp black pepper(optional)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest(optional)
  • 1 cup water or low-sodium broth
  • 3/4 cup uncooked white rice
  • 2 tbsp fresh parsley (chopped)(optional)

Instructions

  1. 1

Cook the rice: Rinse the rice, then add it to a pot with 1 cup water (or low-sodium broth). Bring to a boil, cover, reduce to low, and simmer until tender, about 15 minutes. Turn off heat and keep covered.

  2. 2

Warm the beans: While the rice cooks, heat olive oil in a skillet over medium heat. Add minced garlic and cook for 30–60 seconds until fragrant.

  3. 3

Season and simmer: Stir in white beans, cumin (if using), oregano (if using), salt (if using), and black pepper. Add a splash of water if needed to loosen. Simmer gently for 8–10 minutes, stirring occasionally, until hot and slightly saucy.

  4. 4

Finish and serve: Stir in lemon juice (and lemon zest if using). Fluff the rice and divide into bowls. Spoon the garlicky beans over the rice and top with parsley (if using).
