Ingredients

  • 200 g spaghetti
  • 200 ml coconut milk (full‑fat)
  • 1 tsp curry powder
  • 50 g sun‑dried tomatoes, chopped
  • 1 tsp dried oregano
  • ½ tsp paprika
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt(optional)
  • to taste black pepper(optional)

Instructions

  1. 1

Cook the spaghetti in salted boiling water according to package directions (about 8‑10 minutes), then drain, reserving ¼ cup of pasta water.

  2. 2

While the pasta cooks, heat olive oil in a large skillet over medium heat; add minced garlic and sauté 30 seconds until fragrant.

  3. 3

Stir in curry powder, paprika, and oregano, cooking 1 minute to release aromas.

  4. 4

Add the coconut milk and sun‑dried tomatoes, bring to a gentle simmer, and let the sauce thicken for 3‑4 minutes, adding reserved pasta water if needed for desired consistency.

  5. 5

Toss the cooked spaghetti into the sauce, mix well to coat, season with salt and pepper if using, and serve immediately.
