Ingredients
- 250 grams Ground pork or minced shrimp
- 1 cup Sweet potato (kamote), julienned
- 1 cup Green beans, thinly sliced
- 2 cups Cabbage, shredded
- 1 cup Carrots, julienned
- 3 cloves/1 bulb Garlic and Onion
- 2 pieces Eggs (for wrappers)
- 1 cup Cornstarch or All-purpose flour
- 0.5 cup Brown sugar
- 2 tablespoons Soy sauce
- 0.5 cup Crushed roasted peanuts
- 12 pieces Fresh lettuce leaves
Instructions
- 1
Sauté garlic and onions in a pan, then add the pork or shrimp and cook until browned.
- 2
Add the sweet potato, carrots, and green beans, cooking until slightly tender before adding the cabbage.
- 3
Season the vegetable filling with salt and pepper, then drain any excess liquid and set aside to cool.
- 4
To make wrappers, whisk eggs, 1 cup water, and flour until smooth; pour a thin layer into a non-stick pan to create light crepes.
- 5
For the sauce, simmer water, brown sugar, and soy sauce in a pot, then thicken with a cornstarch slurry.
- 6
Lay a wrapper flat, place a piece of lettuce on top so it sticks out of the edge, and add 2-3 tablespoons of filling.
- 7
Roll the wrapper tightly, tucking in one end while leaving the top open.
- 8
Pour the sweet sauce over the roll and garnish generously with crushed peanuts and minced raw garlic.
