Classic Filipino Chicken Adobo

Ingredients

  • 2 lbs Chicken thighs and drumsticks
  • 0.5 cup Soy sauce
  • 0.33 cup Cane vinegar or white vinegar
  • 6 cloves Garlic, crushed
  • 1 teaspoon Whole black peppercorns
  • 3 pieces Dried bay leaves
  • 1 cup Water
  • 1 tablespoon Brown sugar(optional)
  • 2 tablespoons Cooking oil
  • 1 stalk Green onions, sliced(optional)

Instructions

    In a large bowl, combine chicken, soy sauce, and crushed garlic; marinate for at least 30 minutes.

    Heat oil in a large pot over medium-high heat and sear the chicken pieces until browned on all sides.

    Pour in the remaining marinade, water, peppercorns, and bay leaves; bring to a boil.

    Reduce heat to low, cover, and simmer for 25 to 30 minutes until the chicken is tender.

    Pour in the vinegar and allow it to simmer for 5 minutes without stirring to let the acidity mellow.

    Stir in the brown sugar if using, and continue to simmer uncovered until the sauce thickens to your liking.

    Taste and adjust seasoning, then remove the bay leaves before serving.

    Serve hot over steamed white rice and garnish with sliced green onions.
