- 2 lbs Chicken thighs and drumsticks
- 0.5 cup Soy sauce
- 0.33 cup Cane vinegar or white vinegar
- 6 cloves Garlic, crushed
- 1 teaspoon Whole black peppercorns
- 3 pieces Dried bay leaves
- 1 cup Water
- 1 tablespoon Brown sugar(optional)
- 2 tablespoons Cooking oil
- 1 stalk Green onions, sliced(optional)

In a large bowl, combine chicken, soy sauce, and crushed garlic; marinate for at least 30 minutes.

Heat oil in a large pot over medium-high heat and sear the chicken pieces until browned on all sides.

Pour in the remaining marinade, water, peppercorns, and bay leaves; bring to a boil.

Reduce heat to low, cover, and simmer for 25 to 30 minutes until the chicken is tender.

Pour in the vinegar and allow it to simmer for 5 minutes without stirring to let the acidity mellow.

Stir in the brown sugar if using, and continue to simmer uncovered until the sauce thickens to your liking.
