Ingredients

  • 300 g pork shoulder or pork butt
  • 3 tbsp soy sauce
  • 3 tbsp white vinegar
  • 1/2 cup water
  • 6 cloves garlic
  • 2 bay leaves(optional)
  • 1/2 tsp black pepper
  • 2 tbsp cooking oil
  • 2 cups day-old cooked jasmine rice
  • 2 tbsp adobo-style sauce (from the pork simmer)(optional)
  • 2 tbsp green onions(optional)

    Prep (20 minutes): Cut pork into 1-inch cubes. Mince 4 cloves of garlic and slice the remaining 2 cloves thin. If using bay leaves, set them aside.

    Simmer adobo pork (about 25 minutes): In a pot, combine soy sauce, vinegar, water, minced garlic, black pepper, and bay leaves. Add pork and bring to a gentle simmer. Reduce heat and simmer, stirring occasionally, until pork is very tender and the liquid reduces to a glossy sauce (about 20–25 minutes).

    Finish pork (about 10 minutes): Remove pork from the pot and keep warm. Continue simmering the sauce until it lightly coats a spoon. Return pork to the pot and toss to glaze; set aside.

    Fry garlic rice (about 10 minutes, using remaining cook time): Heat 1 tbsp oil in a large skillet over medium-high. Add sliced garlic and stir until fragrant (about 30–60 seconds). Add rice and break up clumps. Pour in 2 tbsp of the adobo-style sauce (optional) and stir-fry until hot and lightly glossy (about 5–8 minutes).

    Serve (rest of time): Plate garlic fried rice and top with adobo-style pork. Garnish with green onions if desired.
