Ingredients

  • 2 large Russet potatoes
  • 4 slices Bacon
  • 3/4 cup Shredded cheddar cheese
  • 3 Green onions
  • 1 tbsp Olive oil
  • 1/4 cup Sour cream(optional)
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1

Preheat oven to 400°F (200°C). Scrub potatoes, pierce several times with a fork, and bake for 30 minutes until tender.

  2. 2

Meanwhile, cook bacon in a skillet until crisp, about 8 minutes, then crumble. Slice green onions.

  3. 3

Let potatoes cool slightly, halve lengthwise, and scoop out most of the flesh, leaving a 1/4-inch shell.

  4. 4

Brush skins inside and out with olive oil, season with salt and pepper, and bake cut-side up for 10 minutes until crispy.

  5. 5

Fill each skin with cheddar and crumbled bacon, then broil 2-3 minutes until cheese is melted and golden.

  6. 6

Top with green onions and serve with sour cream.
