Recipe serves 2
Ingredients
- 1 lb ground chicken
- 2 tbsp fish sauce
- 3 tbsp lime juice
- 1 shallot
- 2 red chili
- 2 tbsp toasted rice powder
- 3 green onions
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro(optional)
- 8 butter lettuce leaves
- 1 tsp sugar
- 1 tbsp vegetable oil
Instructions
- 1
Toast uncooked rice in a dry skillet over medium heat until golden, then grind to a coarse powder (or use pre-made toasted rice powder).
- 2
Heat oil in a skillet over medium-high heat. Add ground chicken and cook, breaking it up, until no longer pink, about 5-6 minutes.
- 3
Reduce heat to low. Stir in fish sauce, lime juice, sugar, and sliced chilies; simmer 1-2 minutes so the chicken absorbs the flavors.
- 4
Remove from heat and stir in thinly sliced shallot, green onions, mint, cilantro, and toasted rice powder.
- 5
Spoon the larb into lettuce cups and serve immediately.
