Ingredients

  • 5 links Low-sodium Italian turkey or chicken sausage
  • 3 medium Bell peppers (mixed colors), sliced
  • 1.5 lbs Radishes, halved
  • 3 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 tsp Dried oregano
  • 0.5 tsp Crushed red pepper flakes(optional)
  • 0.5 tsp Black pepper
  • 0.25 cup Fresh basil, chopped(optional)
  • 1 tbsp Red wine vinegar(optional)

Instructions

  1. 1

Preheat the oven to 425°F (220°C). Toss the halved radishes with 1.5 tbsp olive oil, half the garlic, black pepper, and oregano, then spread on a baking sheet.

  2. 2

Roast the radishes for 30-35 minutes, flipping halfway, until golden and tender.

  3. 3

While the radishes roast, heat the remaining olive oil in a large skillet over medium heat. Add the sausage links and cook 10-12 minutes, turning occasionally, until browned and cooked through. Remove and slice into coins.

  4. 4

In the same skillet, sauté the bell peppers and remaining garlic for 8-10 minutes until softened and lightly charred at the edges.

  5. 5

Return the sliced sausage to the skillet with the peppers, add red pepper flakes and red wine vinegar, and toss for 2 minutes to combine.

  6. 6

Serve the sausage and peppers alongside the roasted radishes, topped with fresh basil.
