Ingredients

  • 220 g chicken thighs (boneless)
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 cup cherry tomatoes
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh basil(optional)
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 3/4 cup cooked rice
  • 1/2 small lemon(optional)

Instructions

    Preheat oven to 400°F (205°C).

    Season chicken with salt, pepper, oregano, and minced garlic. Place in a baking dish.

    In a bowl, toss cherry tomatoes with olive oil and balsamic vinegar. Spoon over chicken.

    Bake 20–25 minutes until chicken is cooked through.

    Warm rice and season with a squeeze of lemon if desired.

    Top chicken with chopped basil (if using) and serve with rice.
