Ingredients

  • 2 (about 6 oz each) boneless pork chops
  • 2 cups cups cherry tomatoes, halved
  • 2 tbsp tbsp olive oil
  • 3 cloves garlic, minced
  • 0.25 cup cup fresh basil, chopped
  • 1 tsp tsp dried oregano
  • 1 tbsp tbsp balsamic vinegar
  • 3 medium potatoes, cubed
  • 1 tsp tsp rosemary, chopped(optional)
  • 1 tsp tsp salt
  • 0.5 tsp tsp black pepper

Instructions

  1. 1

Preheat oven to 425°F. Toss cubed potatoes with 1 tbsp olive oil, rosemary, salt, and pepper; roast 25-30 minutes until golden.

  2. 2

Season pork chops with salt, pepper, and oregano.

  3. 3

Heat remaining olive oil in an oven-safe skillet over medium-high heat. Sear pork chops 3 minutes per side until browned, then transfer to the oven with the potatoes for the final 10 minutes, or cook on the stovetop until internal temperature reaches 145°F.

  4. 4

Remove pork and add garlic and cherry tomatoes to the skillet. Cook 5-6 minutes until tomatoes burst.

  5. 5

Stir in balsamic vinegar and basil, then spoon the sauce over the pork chops.

  6. 6

    Serve with roasted potatoes.
