Ingredients

  • 2 pieces Pita bread
  • 6 oz Fresh spinach
  • 3 oz Feta cheese
  • 1/2 cup Plain Greek yogurt
  • 1 tbsp Lemon juice
  • 1 tbsp Olive oil
  • 1 clove Garlic(optional)
  • 1/4 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): If using whole garlic, mince the garlic. Roughly chop the spinach if needed. Crumble the feta.

  2. 2

Cook (15 minutes): Heat olive oil in a skillet over medium heat. Sauté garlic (if using) for 30–60 seconds, then add spinach and cook until wilted, about 5–7 minutes. Season with salt and black pepper.

  3. 3

Make the lemony yogurt spread (during the last minute of cooking): Stir Greek yogurt with lemon juice.

  4. 4

Assemble: Warm the pita in the skillet or microwave for 30–60 seconds. Stuff each pita with the hot spinach and feta, then spoon the lemony yogurt over the top and serve immediately.
