Ingredients

  • 300 g chicken breast, boneless skinless
  • 170 g orzo
  • 700 ml chicken broth
  • 1 lemon (zest and juice)
  • 3 cloves garlic
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp salt(optional)
  • 0.25 tsp black pepper(optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. 1

Prep (10 minutes): Slice the chicken into bite-size pieces. Mince the garlic. Zest and juice the lemon. Chop the parsley.

  2. 2

Cook (15 minutes): In a pot, heat olive oil over medium heat. Add garlic and oregano and stir for 30 seconds until fragrant.

  3. 3

Add orzo and pour in chicken broth. Bring to a gentle boil, then reduce to a simmer and cook, stirring occasionally, until orzo is tender (about 10 minutes).

  4. 4

Stir in the lemon zest and lemon juice. Add the chicken pieces and simmer until cooked through (about 5 minutes). Season with salt and black pepper to taste.

  5. 5

Finish: Stir in parsley and serve hot.
