Ingredients

  • 300 g boneless skinless chicken breast
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 4 wooden skewers, soaked(optional)

Instructions

  1. 1

In a bowl, whisk together soy sauce, lemon juice, oregano, olive oil, and minced garlic.

  2. 2

Cut the chicken into 1‑inch cubes, add to the marinade, and toss to coat. Let sit for 10 minutes while you preheat the grill.

  3. 3

Thread the chicken pieces onto soaked skewers, leaving a little space between each cube.

  4. 4

Grill the skewers over medium‑high heat for about 6 minutes per side, until the chicken is cooked through and has nice grill marks.

  5. 5

Remove from heat, let rest 2 minutes, then serve with a squeeze of fresh lemon if desired.
