Ingredients

  • 1 cup cup long-grain white rice (basmati or jasmine)
  • 2 cups cup chicken or vegetable broth
  • 1/2 tsp tsp ground turmeric
  • 1/2 tsp tsp ground cumin
  • 1/2 cup cup frozen peas
  • 1 tbsp tbsp olive oil
  • 1/2 small onion, finely diced
  • 2 cloves clove garlic, minced
  • 1/4 tsp tsp salt
  • 1/4 tsp tsp black pepper
  • 2 tbsp tbsp fresh cilantro or parsley, chopped(optional)

Instructions

  1. 1

Rinse the rice under cold water until the water runs clear, then drain well (about 2 minutes).

  2. 2

Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and cook for 3 minutes until softened, then stir in the garlic, turmeric, and cumin and cook for 30 seconds until fragrant.

  3. 3

Add the rice and stir to coat with the spiced oil for about 1 minute. Pour in the broth and add salt and pepper; bring to a boil.

  4. 4

Reduce heat to low, cover, and simmer for 15 minutes until the liquid is absorbed.

  5. 5

Stir in the frozen peas, re-cover, and let sit off the heat for 3 minutes. Fluff with a fork, garnish with cilantro or parsley if using, and serve.
