A visually stunning sushi roll featuring crispy shrimp tempura topped with thin slices of ripe mango and a drizzle of sweet eel sauce.

Ingredients

  • 2 cups Sushi rice (seasoned)
  • 2 sheets Nori sheets
  • 4 pieces Shrimp tempura
  • 1 whole Ripe mango (thinly sliced)
  • 0.5 cup Cucumber (julienned)
  • 0.5 whole Avocado (sliced)
  • 2 tablespoons Unagi sauce (Eel sauce)
  • 1 tablespoon Spicy mayo(optional)
  • 1 tablespoon Tobiko (flying fish roe)(optional)
  • 1 teaspoon Toasted sesame seeds

Instructions

    Place a half sheet of nori on a bamboo rolling mat covered with plastic wrap.

    Spread 1 cup of sushi rice evenly over the nori, leaving a small margin at the top.

    Flip the nori over so the rice is facing down on the plastic wrap.

    Place 2 pieces of shrimp tempura, cucumber strips, and avocado slices in the center of the nori.

    Roll the bamboo mat tightly, tucking the edge to form a uniform cylinder.

    Lay thin slices of mango over the top of the roll, slightly overlapping them like dragon scales.

    Place the bamboo mat back over the roll and press gently to adhere the mango to the rice.

    Slice the roll into 8 pieces using a wet, sharp knife, then drizzle with unagi sauce and sprinkle with sesame seeds.
