Ingredients

  • 1 lb Chicken wings
  • 1 cup Pecan wood chips
  • 1 tbsp Fresh rosemary
  • 1 tbsp Fresh thyme
  • 4 cloves Garlic
  • 3 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1

Preheat a smoker to 225°F (107°C) and add the pecan wood chips according to the manufacturer’s instructions.

  2. 2

While the smoker heats, pat the chicken wings dry, then toss them with olive oil, salt, and black pepper in a large bowl.

  3. 3

Place the seasoned wings on the smoker rack and smoke for 30 minutes, keeping the lid closed.

  4. 4

Meanwhile, melt butter in a small saucepan over low heat, add minced garlic, rosemary, and thyme, and cook until the garlic is fragrant and lightly golden, about 5 minutes.

  5. 5

After 30 minutes of smoking, remove the wings and brush them generously with the herb‑garlic butter.

  6. 6

Return the wings to the smoker and continue cooking for an additional 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crisp.

  7. 7

Remove the wings, let them rest for 2 minutes, then serve with any remaining herb butter on the side.
