Ingredients

  • 4 large Eggs
  • 1 medium Zucchini
  • 1/4 cup Parmesan cheese
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh basil
  • 1 tablespoon Fresh parsley
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper

Instructions

  1. 1

Grate the zucchini and squeeze out excess moisture with a clean kitchen towel.

  2. 2

Heat olive oil in a non‑stick skillet over medium heat, add the zucchini, and sauté for 4–5 minutes until softened; season with salt and pepper.

  3. 3

In a bowl, whisk the eggs, then stir in the grated Parmesan, chopped basil, and parsley.

  4. 4

Pour the egg mixture over the sautéed zucchini, reduce heat to low, and cook undisturbed for 6–7 minutes until the edges set.

  5. 5

Transfer the skillet to a preheated oven at 180 °C (350 °F) and bake for 4–5 minutes, or until the frittata is fully set and lightly golden on top.

  6. 6

Remove from the oven, let rest 1 minute, slice into two portions, and serve warm.
