Ingredients

  • 2 fillets salmon fillets
  • 1 medium fennel bulb
  • 1 medium orange
  • 1 medium lemon
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried oregano(optional)
  • 2 tbsp chopped fresh parsley(optional)

Instructions

  1. 1

Heat oven to 425°F (220°C). Slice fennel bulb thinly; mince garlic. Zest and juice the orange and lemon, keeping juice separate.

  2. 2

On a sheet pan, toss fennel with olive oil, garlic, salt, pepper, and oregano (if using). Spread in an even layer and roast for 10 minutes.

  3. 3

Remove pan, push fennel to one side, and place salmon on the pan. Season salmon with a little salt and pepper. Drizzle salmon and fennel with orange and lemon juice, then roast until salmon flakes easily and fennel is tender and lightly caramelized, 10 more minutes.

  4. 4

Finish with orange/lemon zest and parsley (if using). Serve immediately.
