Ingredients

  • 3/4 cup Coconut milk
  • 1/2 cup Water
  • 1/2 cup Grass jelly (ready-made)
  • 2 tbsp Palm sugar
  • 2 tbsp Water (for palm sugar syrup)
  • 1/4 cup Rice flour
  • 1 tbsp Tapioca flour
  • 1/8 tsp Salt
  • 2 tbsp Hot water (for dough)
  • 1 cup Ice(optional)

Instructions

  1. 1

Make the palm sugar syrup: combine palm sugar and 2 tbsp water in a small saucepan. Heat until dissolved and slightly thickened, about 3–4 minutes. Set aside to cool.

  2. 2

Cook the rice flour pearls: mix rice flour, tapioca flour, and salt. Add hot water and stir to form a soft dough. Roll into tiny pearls (or pinch off small pieces). Bring a small pot of water to a gentle boil and simmer pearls until they float and turn translucent, about 6–7 minutes. Drain and rinse briefly with cold water.

  3. 3

Assemble and chill: in two glasses, add grass jelly and cooked pearls. Stir coconut milk with 1/2 cup water, then pour into the glasses. Drizzle with palm sugar syrup and add ice. Serve immediately.
