Ingredients

  • 3 cups cooked jasmine rice (day-old preferred)
  • 2 eggs
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 1/2 cup frozen peas
  • 3 green onions, sliced
  • 1 lime
  • 1 tsp sugar
  • 1/4 cup cilantro, chopped(optional)
  • to taste sliced chili or chili flakes(optional)

Instructions

  1. 1

Prep all ingredients: mince the garlic, dice the carrot, slice the green onions, and cut the lime into wedges. If using day-old rice, break up any clumps with your hands. (5 minutes)

  2. 2

Heat 1 tbsp oil in a wok or large skillet over medium-high heat. Beat the eggs, pour in, and scramble until just set, about 30 seconds. Remove and set aside.

  3. 3

Add remaining oil, then stir-fry garlic and carrot for 1-2 minutes until fragrant. Add peas and cook 1 minute more.

  4. 4

Add the rice, breaking up clumps, and stir-fry for 3-4 minutes until heated through and slightly crispy.

  5. 5

Push rice aside, return the eggs, then add fish sauce, soy sauce, and sugar. Toss everything together for 1 minute.

  6. 6

Remove from heat, stir in green onions, and squeeze lime juice over the top. Garnish with cilantro and chili if desired. Serve immediately. (2 minutes)
