Ingredients

  • 200 g pasta (penne or fusilli)
  • 250 g cherry tomatoes
  • 150 g fresh mozzarella
  • 15 g fresh basil leaves
  • 3 tbsp olive oil
  • 2 cloves garlic
  • 1 tbsp balsamic glaze(optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente, about 10-11 minutes. Reserve 1/4 cup pasta water before draining.

  2. 2

While the pasta cooks, halve the cherry tomatoes, tear the mozzarella into bite-sized pieces, and slice or tear the basil leaves. Mince the garlic.

  3. 3

Heat olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute until fragrant, then add the cherry tomatoes and cook 3-4 minutes until they begin to soften and release juices.

  4. 4

Add the drained pasta to the skillet with a splash of the reserved pasta water and toss to coat. Season with salt and black pepper.

  5. 5

Remove from heat and gently fold in the mozzarella and basil so the cheese softens slightly. Drizzle with balsamic glaze if using and serve immediately.
