- 4 large Bell peppers or large zucchini
- 1 lb Ground protein (beef, turkey, or lentils)
- 1.5 cups Cooked rice or quinoa

- 2 cloves Minced garlic
- 1 cup Tomato sauce
- 1 cup Shredded cheese (mozzarella or cheddar)(optional)
- 2 tbsp Olive oil
- 1 tsp Dried oregano or Italian seasoning
- 1 tsp Salt and black pepper
- 2 tbsp Fresh parsley(optional)

Preheat your oven to 375°F (190°C) and lightly grease a large baking dish.

Prepare your vegetables by cutting off the tops of peppers or slicing zucchini in half lengthwise and scooping out the seeds.

In a large skillet, heat olive oil over medium heat and sauté the onions and garlic until translucent.

Add your chosen ground protein to the skillet and cook until browned, draining any excess fat.

Stir in the cooked rice, half of the tomato sauce, and your selected seasonings (oregano, salt, and pepper).

Stuff each prepared vegetable cavity generously with the protein and rice mixture.
