Ingredients

  • 600 g beef sirloin, cut into 1‑inch cubes
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp fresh mint, chopped
  • 2 cloves garlic, minced
  • 1 small Thai red chili, finely sliced
  • 1 tbsp fish sauce
  • 1 large radish, peeled into thin ribbons
  • ½ tsp salt
  • ¼ tsp black pepper, freshly ground

Instructions

  1. 1

In a bowl, whisk together olive oil, lime juice, cilantro, mint, garlic, sliced chili, fish sauce, salt, and pepper to form the herb‑chili marinade.

  2. 2

Add the beef cubes to the marinade, toss to coat, and let sit at room temperature for 20 minutes while you prepare the skewers.

  3. 3

Thread the marinated beef cubes onto metal or soaked bamboo skewers, leaving a small gap between pieces for even cooking.

  4. 4

Preheat a grill or grill pan over medium‑high heat; brush lightly with oil. Grill the skewers, turning every 2‑3 minutes, until the beef is browned on the outside and reaches medium‑rare (about 12‑15 minutes total).

  5. 5

While the beef cooks, arrange the radish ribbons on a serving platter.

  6. 6

Remove the skewers from the grill, let rest 2 minutes, then serve atop the radish ribbons with any remaining herb‑chili sauce drizzled over.
