Ingredients

  • 225 g Italian sausage (mild or sweet)
  • 2 cloves Garlic
  • 90 g Baby spinach
  • 120 ml Heavy cream
  • 60 g Parmesan cheese (finely grated)
  • 170 g Pasta (penne or rigatoni)
  • 1 tbsp Olive oil(optional)
  • to taste Salt(optional)
  • to taste Black pepper(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil. Cook the pasta until al dente, then reserve about 1/2 cup (120 ml) of pasta water and drain.

  2. 2

While the pasta cooks, brown the sausage in a large skillet over medium-high heat until cooked through, breaking it up as it cooks. Add the olive oil if the pan is dry.

  3. 3

Reduce heat to medium. Add the minced garlic and cook for about 30 seconds until fragrant, then stir in the spinach and cook until wilted.

  4. 4

Pour in the heavy cream and simmer briefly (about 2 minutes) until slightly thickened. Stir in the Parmesan until melted and smooth.

  5. 5

Add the drained pasta to the skillet and toss to coat, loosening with a splash of reserved pasta water if needed. Season with black pepper (and salt only if needed). Serve immediately.
