Ingredients

  • 3/4 cup Long-grain white rice
  • 1 1/2 cups Water
  • 1 cup Black beans (canned, drained and rinsed)
  • 1 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 1 tsp Ground cumin
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tbsp Lime juice
  • 1/4 cup Cilantro (chopped)

Instructions

  1. 1

Prep (10 minutes): Rinse and drain the black beans. Mince the garlic and chop the cilantro. Measure the rice, water, cumin, salt, pepper, and lime juice.

  2. 2

Cook the rice (about 15 minutes): In a small pot, bring the water to a boil. Add the rice, reduce to a low simmer, cover, and cook until tender (about 12–15 minutes).

  3. 3

Simmer the beans (about 10 minutes): While the rice cooks, heat olive oil in a skillet over medium heat. Add garlic and cook 30–60 seconds until fragrant. Stir in cumin, salt, and pepper, then add the black beans and cook 8–10 minutes, stirring occasionally, until hot and slightly thickened.

  4. 4

Combine and finish (about 5 minutes): Fluff the cooked rice and fold in the seasoned beans. Stir in lime juice and cilantro. Taste and adjust seasoning if needed, then serve.
